Steward – Duties & Responsibilities

• Maintain cleanliness and hygiene of the restaurant, kitchen, service areas, and equipment.
• Clean and sanitize tables, chairs, counters, utensils, crockery, and glassware.
• Assist service staff with setting up and clearing tables.
• Wash and polish cutlery, crockery, and glassware as required.
• Support food and beverage service during busy periods.
• Ensure adequate stock of plates, glasses, cutlery, napkins, and other service items.
• Follow food safety, hygiene, and workplace safety standards.
• Dispose of waste properly and maintain cleanliness of garbage areas.
• Assist with receiving, storing, and organizing supplies.
• Report damaged equipment, shortages, spills, or maintenance issues to the supervisor.
• Perform other duties assigned by the Captain or management.

Captain – Duties & Responsibilities

• Supervise daily restaurant/service operations and ensure smooth service.
• Welcome guests and ensure they receive professional and courteous service.
• Allocate tables and coordinate responsibilities among service staff.
• Take and accurately communicate food and beverage orders.
• Ensure correct sequence and timely delivery of food and beverages.
• Monitor guest satisfaction and handle routine complaints professionally.
• Coordinate with the kitchen, bar, stewarding, and other departments.
• Ensure tables and service stations are properly set up before service.
• Check food presentation, portioning, and service standards.
• Ensure billing is accurate and assist guests with payment procedures.
• Train and guide junior service staff.
• Maintain hygiene, grooming, and service standards.
• Monitor inventory of service items and report shortages.
• Assist management in maintaining operational and customer-service standards.

Captain – Duties & Responsibilities

• Supervise Captains, stewards, servers, and other assigned F&B staff.
• Take responsibility for the overall operation of an assigned restaurant section or outlet.
• Conduct pre-shift briefings and allocate duties to team members.
• Ensure high standards of guest service, food quality, presentation, and hospitality.
• Handle VIP guests and special requests professionally.
• Resolve guest complaints and service issues promptly.
• Coordinate closely with the kitchen, bar, stewarding, front office, and management.
• Monitor table turnover and ensure efficient service during peak hours.
• Check opening and closing procedures and ensure proper handover.
• Monitor staff attendance, grooming, discipline, and performance.
• Assist with staff training and coaching.
• Check stock levels and minimize wastage and breakage.
• Verify bills, discounts, complimentary items, and payment procedures where applicable.
• Prepare or assist with daily operational reports.
• Ensure compliance with hygiene, safety, and company policies.
• Support the Restaurant Manager/Outlet Manager in achieving service and sales targets.

Barista – Duties & Responsibilities

• Prepare and serve coffee, tea, and other hot and cold beverages according to standards.
• Operate espresso machines, grinders, blenders, and other beverage equipment safely.
• Grind coffee beans and maintain correct brewing parameters.
• Prepare espresso, cappuccino, latte, americano, cold coffee, and specialty beverages.
• Maintain consistency in taste, temperature, presentation, and portion size.
• Prepare and serve beverages promptly and courteously.
• Maintain cleanliness and hygiene of the coffee station and equipment.
• Clean and backflush espresso machines and grinders as required.
• Monitor coffee, milk, syrups, cups, and other beverage inventory.
• Store ingredients correctly and check freshness and expiry dates.
• Take customer orders and process payments accurately where required.
• Recommend beverages and explain menu items to guests.
• Handle customer requests and complaints professionally.
• Minimize wastage and follow proper stock-rotation procedures.
• Follow food safety, hygiene, and workplace safety regulations.

Bartender – Duties & Responsibilities

• Prepare and serve alcoholic and non-alcoholic beverages according to standard recipes.
• Prepare cocktails, mocktails, spirits, wine, beer, and other beverages.
• Take beverage orders accurately and provide friendly, professional service.
• Maintain the bar counter, equipment, glassware, and storage areas in clean condition.
• Check the quality and presentation of drinks before serving.
• Maintain proper stock levels of beverages, mixers, garnishes, ice, and bar supplies.
• Monitor inventory and report shortages or damaged/expired products.
• Follow correct pouring, measuring, and portion-control procedures.
• Operate bar equipment safely and responsibly.
• Handle cash, POS transactions, and billing accurately when required.
• Recommend drinks based on guest preferences and menu offerings.
• Maintain responsible service practices and follow applicable laws and company policies regarding alcohol service.
• Monitor guest behavior and inform supervisors/security when necessary.
• Reduce wastage, breakage, and spillage.
• Complete bar opening, closing, cleaning, and stock-check procedures.
• Coordinate with the kitchen, service team, stewarding, and management for smooth operations.
