Job Description: Chef de Partie (CDP) – Bakery

Department: Bakery

Location: AMA Cafe, Delhi

Reports To: Sous Chef / Head Chef

Role Purpose

Responsible for independently running the bakery section, ensuring consistent quality, hygiene, and timely production of all bakery items including breads, pastries, cakes, and desserts.

Key Responsibilities

• Manage day-to-day operations of the bakery section, ensuring smooth production flow
• Prepare and bake breads, cakes, pastries, cookies, and other bakery items as per standard recipes
• Maintain consistency in taste, quality, and presentation across all bakery products
• Plan daily production based on sales forecast, wastage, and stock levels
• Ensure proper storage, labeling, and rotation (FIFO) of raw materials and finished products
• Supervise and guide the DCDP and kitchen helpers assigned to the bakery section
• Maintain hygiene, cleanliness, and food safety standards (FSSAI compliance) in the section
• Monitor stock levels and raise indents for bakery ingredients and packaging material
• Control wastage and portion sizes to manage food cost
• Innovate and develop new bakery products/seasonal specials in coordination with the Head Chef
• Maintain equipment (ovens, mixers, proofers) and report maintenance issues promptly
• Train and mentor junior staff in bakery techniques and standards

Requirements

• Diploma/Certification in Bakery & Confectionery or Culinary Arts
• 3–5 years of experience in a similar role, preferably in a cafe/QSR/bakery setup
• Strong knowledge of baking techniques, ingredients, and equipment
• Good understanding of food safety and hygiene standards
• Ability to work in a fast-paced environment and manage a small team
• Willingness to work in shifts, including weekends/holidays

Department: Bakery

Location: AMA Cafe, Delhi

Reports To: Chef de Partie (CDP) – Bakery

Role Purpose

Supports the CDP in the daily operations of the bakery section, assisting in preparation, baking, and finishing of bakery products while maintaining quality and hygiene standards.

Key Responsibilities

• Assist the CDP in daily bakery production as per set recipes and standards
• Prepare doughs, batters, fillings, and other bakery pre-preps
• Bake and finish products (breads, cakes, pastries) under CDP's supervision
• Ensure proper mise-en-place is ready before each shift
• Follow hygiene, cleanliness, and food safety practices at the workstation
• Assist in stock checking, storage, and labeling of ingredients
• Support in portion control and minimizing wastage
• Clean and maintain bakery equipment and work area
• Step in for the CDP's routine tasks during their absence, as needed
• Follow instructions for new recipes/products introduced in the section

Requirements

• Certification/Diploma in Bakery & Confectionery or Culinary Arts (or equivalent experience)
• 1–3 years of experience in a bakery/kitchen role
• Basic knowledge of baking methods, ingredients, and kitchen equipment
• Understanding of food safety and hygiene practices
• Willingness to learn and work under supervision
• Flexible with shifts, including weekends/holidays
