Job Description

### Indian DCDP – Key Responsibilities


* Handle daily operations of the Indian kitchen section.


* Prepare authentic North Indian and Indian cuisine dishes as per restaurant standards.


* Ensure consistency in taste, quality, presentation and portion control.


* Manage preparation of gravies, curries, dals, vegetables, rice and other Indian dishes.


* Maintain standard recipes and ensure proper use of ingredients and spices.


* Supervise and guide Commis Chefs and kitchen helpers.


* Ensure timely food preparation during peak service hours.


* Maintain food hygiene, safety and sanitation standards.


* Monitor stock levels and coordinate daily kitchen requisitions.


* Control food wastage and maintain food cost standards.


* Ensure proper storage, labelling and FIFO practices.


* Coordinate with other kitchen sections for smooth operations.


* Assist Sous Chef and Head Chef in menu planning and new dish development.
