About the Role
We are seeking a highly experienced, qualified, and results-driven Dairy Plant Manager to lead and oversee all operations at our state-of-the-art dairy processing facility in Jagdalpur, Chhattisgarh. The plant operates at 50,000 litres per day capacity and manufactures a diverse range of dairy products including milk, paneer, shrikhand, ghee, dahi, rabdi, and khowa.
The ideal candidate will be a strategic leader with deep technical expertise in milk processing, strong command over quality systems, costing, and the ability to drive operational excellence, minimize losses, and build a high-performance team.
Key Responsibilities
1. Plant Operations & Production Management
- Oversee end-to-end operations of the 50,000 LPD dairy processing plant on a daily basis
- Plan, schedule, and supervise production of milk, paneer, shrikhand, ghee, dahi, rabdi, and khowa
- Ensure optimal utilization of plant capacity and equipment to achieve production targets
- Monitor and control the entire milk processing cycle from raw milk reception to final dispatch
- Maintain and enforce temperature and cold chain management throughout the plant
2. Milk Quality & Raw Material Management
- Supervise testing and quality checks of incoming raw milk including fat%, SNF%, acidity, adulteration, and microbial load
- Monitor Kg Fat and Kg SNF (KFKSNF) calculations accurately for procurement and production planning
- Implement and enforce raw material acceptance/rejection criteria as per FSSAI and internal standards
- Coordinate with milk procurement team to ensure consistent quality and quantity of raw milk supply
3. Quality Assurance & Hygiene (CIP & HACCP)
- Implement and maintain CIP (Clean-in-Place) systems across all processing lines and equipment
- Ensure hygiene standards and sanitation protocols are strictly adhered to throughout the plant
- Develop, review, and enforce Product SOPs and Process SOPs for all dairy products
- Monitor GMP/GHP compliance and ensure readiness for audits (FSSAI, ISO, HACCP, etc.)
- Control and minimize product handling losses at each stage of production
4. Costing & Financial Management
- Prepare and manage per-litre milk processing cost analysis and product-wise costing
- Track and minimize input costs including raw milk, packaging, utilities, and manpower
- Monitor and reduce electricity and energy bills through efficient plant operations
- Prepare MIS reports on production, losses, yields, and costing using MS Excel and ERP/SAP systems
- Identify and implement cost-saving measures without compromising product quality
5. Dispatch & Supply Chain Coordination
- Oversee product dispatch operations ensuring timely delivery with proper documentation
- Coordinate with sales and logistics teams for daily dispatch planning
- Ensure proper FIFO stock management and cold chain maintenance in dispatch area
- Manage packaging material inventory and coordinate with procurement for timely availability
6. Team Management & HR Operations
- Prepare and manage staff duty rosters for shift-based operations across all departments
- Lead, train, and develop plant staff to improve productivity, quality consciousness, and efficiency
- Conduct regular performance reviews and training programs for technical and operational staff
- Manage manpower deployment and ensure optimal utilization across production, QA, and dispatch
7. Compliance, Innovation & Growth
- Ensure full compliance with FSSAI regulations, PFA Act, BIS standards, and local statutory requirements
- Drive product innovation and introduce new dairy products in line with market demand
- Implement best practices, new technologies, and process improvements for plant growth
- Prepare monthly and annual production reports for management review
Qualifications & Experience
Educational Qualification
- Minimum: Master's Degree in Dairy Technology / Dairy Science / Food Technology / Dairy Engineering / Food Science & Nutrition
- Preferred: M.Tech / M.Sc from NDRI, SMVDU, ICAR-affiliated institutes or equivalent reputed institutions
- Additional certifications in HACCP, ISO 22000, or Food Safety Management will be an advantage
Experience
- 8 to 15 years of progressive experience in dairy plant operations and management
- Must have experience managing a plant with minimum 20,000 LPD or higher capacity
- Proven track record of managing full plant operations including processing, quality, costing, and dispatch
- Hands-on experience with CIP systems, milk standardization, and multi-product dairy manufacturing
